Roast Breast of TurkeyCuisine: American Category: poultry Servings: 8 Ingredients:4 oz. turkey trimmings, chilled1/2 egg white, chilled 1 tsp. sage 1 tsp. thyme salt and pepper, to taste 2 oz. heavy cream, chilled 1 turkey breast half Instructions:Grind turkey trimmings through fine die; place in chilled container of blender or food processor. Add egg white, herbs and seasonings; process lightly. Gradually add cream, processing after each addition. Lift skin of breast; season interior with salt and pepper. Spread forcemeat over turkey flesh; pull skin back down to cover forcemeat and secure with skewer. Bake at 425 degrees F for 10 minutes. Reduce heat to 295 degrees F; bake for 25 to 30 minutes more or until internal temperature reaches 155 degrees F. Remove from oven; let stand for 30 minutes.
