Worcestershire sauce 1 tsp. onion, pared, diced sugar, to taste salt and pepper, to taste 1-3/4 lb. center-cut pork loin 1-1/2 cups demi-glace vegetable oil, as needed 1 lb. mustard greens, sauteed Instructions:Combine first five ingredients in glass dish. Add pork. Cover; refrigerate for 2 hours. Remove pork; reserve. Pour marinade into sauce pot; reduce until almost dry. Add demi-glace; simmer for 10 minutes. Strain; reserve warm. Heat vegetable oil until very hot. Add pork; sear on all sides. Transfer to roasting pan; roast at 350 degrees F for 20 minutes. Remove from oven; coat with scallop-leek mixture.
