Deglaze with wine; remove from heat and let cool. Add Parmesan cheese and egg white; combine. Squeeze mixture to remove excess moisture. Pipe mixture into pockets on reserved pheasant breasts; press to distribute evenly. Wrap breasts in caul; place in baking dish.
